From the first greeting to the final service, the Food and Beverage Service Management program trains students to create exceptional dining experiences across restaurants, luxury hotels, and event venues. Our curriculum goes beyond fundamental service techniques to include specialized modules in barista arts, sommelier expertise, and creative mixology.

All training is delivered according to rigorous LQA (Leading Quality Assurance) standards, ensuring international recognition. The program focuses on developing professionals capable of anticipating guest needs with precision and elegance. By mastering both traditional protocols and modern skills, graduates are prepared to transform a simple meal into a memorable moment of hospitality in the world’s most prestigious establishments.

Program overview

Led by National Master Trainers, this program combines rigorous theoretical foundations with intensive practical application to prepare students for high-quality food and beverage management. The training structure follows a balanced split with 54% theory at school and 46% dedicated to practice and internship, ensuring students master concepts before applying them in real-world settings. The curriculum strictly adheres to international HACCP hygiene standards and integrates specialized modules delivered by industry partners: GBS Gourmet Beverage Solutions for barista arts, Celliers d’Asie for professional wine service, and Ampov for rum expertise. This collaborative approach ensures students master current market trends and professional protocols from day one.

Our training restaurant

A cornerstone of the training is "Le Jardin des Délices", our fully operational on-campus restaurant open to the public every lunchtime from Tuesday to Friday. In this authentic environment, students do not merely observe; they take full responsibility for operating the service. They rotate daily through diverse roles (supervisor, hostess, bartender, cashier, …), which allows them to experience the specific challenges and responsibilities of each position. This rotation system builds versatility and empathy among team members, essential traits for future managers. Beyond daily lunch services, students also plan and execute catering for external events and internal showcases, such as the school’s prestigious annual charity gala. These high-pressure scenarios teach them to maintain composure, manage time effectively, and deliver flawless service even during peak hours, perfectly mirroring the reality of a busy luxury establishment.

Our sommelier class

While all students receive comprehensive foundational training in wine service, including grape varieties, tasting techniques, and pairing principles, the program offers a selective Sommelier class for motivated candidates seeking deeper expertise. This specialized track is designed for students who wish to pursue a career path focused on beverage management and oenology. Under the guidance of certified experts, participants engage in intensive tastings, study complex wine regions, and master the art of cellar management. The culmination of this track is the preparation for the internationally recognized WSET Level 1 Award in Wines. Achieving this certification provides graduates with a distinct competitive edge in the job market, signaling to top employers, such as luxury hotels and fine dining restaurants, that they possess verified, professional-level knowledge in one of the most sophisticated aspects of hospitality service.
